• Winter Pressed Salad with Asian Dressing

Menu Highlights

Millet & Sweet Vegetable Soup

A deeply warming, grounding winter soup that strengthens the Spleen and Stomach, supports digestion, and builds energy. Millet is traditionally used to clear dampness and excess mucus while sweet vegetables and winter squash tonify Earth energy. Shiitake and miso support immunity and the protective energy around the body, making this an ideal soup for cold weather and seasonal transitions.
Naturally gluten-free and easy to digest, millet provides complex carbohydrates, magnesium, and B vitamins for steady energy. Sweet vegetables supply beta-carotene and antioxidants, while fermented miso adds probiotics to support gut health and immune resilience. If burdock is added to the soup, it helps to clean the blood and strengthens kidneys as, well.

Leek-Daikon-Nishime with marinated Tempeh

A classic warming, descending dish that supports the Lung and Large Intestine, ideal for winter congestion or sluggish digestion. Daikon helps transform phlegm and relieve stagnation, leeks warm the interior, and ginger promotes circulation. Tempeh adds grounding protein without heaviness.
This dish is high in plant-based protein, calcium, and iron from tempeh, with digestive enzymes and probiotics from fermentation. Daikon supports digestion and liver detoxification, while kuzu or arrowroot provides gentle gut-soothing properties.

Winter Pressed Salad with Asian-Style Scallion Dressin
This lightly pressed salad offers a gentle, digestible way to enjoy raw vegetables in winter. Pressing reduces harsh cold qualities while preserving vitality. Cabbage and root vegetables support the Liver and digestion, while the warm, aromatic scallion dressing activates energy flow and prevents stagnation.
Rich in fiber, vitamin C, and phytonutrients, this salad supports detoxification and gut health. Light fermentation through pressing enhances mineral absorption, while seeds or nuts provide healthy fats and sustained satiety.
